The junior sous chef will be used to working in a banqueting environment and will be helping the senior sous chef lead a team of 15 cooking for up to 1000 covers. The main restaurant can go up to 250 covers at weekends and between 50 an 100 during the week. The kitchen can also serve around 500 for breakfast as well as up to 600 between the two main conference suites. Make no mistake, this is not a position for the faint hearted! This is not a position for a prima donna or a person given to screaming at the brigade to get results and your man management will be at a very high level.
